When I am in need of a light healthy lunch, I like to have grilled zucchini halves drizzles with olive oil and sprinkled with cayenne pepper and sea salt. This light lunch is filling, hearty, flavorful and provides the body with fiber, vitamins, minerals and antioxidants that can help nourish the body. Best of all, the cayenne pepper and olive oil you drizzle over the zucchini helps reduce inflammation in the body naturally so this is the perfect little light lunch for those with inflammatory diseases.
To grill the zucchini I slice a zucchini into halves, drizzle, and sprinkle on the olive oil and spices. Then I place the zucchini halves on the grill on high heat for about ten to fifteen minutes, or until they are fork tender with lovely chard grill marks.
After, I serve this healthy light lunch up on a plate and eat it up. The zucchini halves have a hot light salty flavor that is so savory and delightful. It is definitely a dish that is great as a side dish too with any meal such as fish, chicken, steak or shrimp, or served up over rice with other vegetables if you are a vegetarian.
