Many different fish, not all related, are sold under the name of bass. Black sea bass, with its lean, firm flesh, is popular in Chinese cooking, steamed or deep-fried. Red and black groupers, the two most common kinds, are caught in temperate waters and appear in the cuisine of many Spanish-speaking countries. Most white sea bass on the market comes from Mexico. Although it is classified as in the drum family, white sea bass has firm white flesh like most members of the sea bass family. Hawaiian sea bass, called Hapu’upu’u, has dense meaty flesh. Chilean sea bass, not actually a member of the sea bass family, has large, pointed teeth and richer, softer flesh than sea bass. The Gulf coney grouper, or baquetta, lives along the West Coast of Central America and has dense, meaty flesh.

Ingredients
2 sea bass fillets, each 4 ounces
1 tablespoon lemon juice
1 teaspoon garlic, minced
1/4 teaspoon salt-free herbed seasoning blend
Ground black pepper, to taste

Directions
Preheat the broiler (grill). Position the rack 4 inches from the heat source.

Lightly spray a baking pan with cooking spray. Place the fillets in the pan. Sprinkle the lemon juice, garlic, herbed seasoning and pepper over the fillets.

Broil (grill) until the fish is opaque throughout when tested with a tip of a knife, about 8 to 10 minutes. Serve immediately.

THOUGHTS OF A DONOR

I gave my blood, Christ gave His.
I gave a pint. He gave all.
The needle is small and sharp.
the nails were large and dull.
The cot is soft and restful.
The cross, rough and painful.
The nurses are kind and gentle.
The soldiers, cruel and mean.
The crowd applauds my sacrifice,
They that passed by reviled HIM.
Mine is type O positive.
His is positively for all.
Mine, at best, will prolong life for a little while,
His, without a doubt, saves all FOREVER.
