March 27th, 2008 by Irene Bellamy

These are the things you will need:

1 ounce sun-dried tomatoes.  You wil need to cut them into 1/4 in. strips.

8 ounces angel hair pasta, uncooked

2 cups broccoli, cut up into small flowerets

1 tablespoon olive oil

3 cloves garlic, crushed

1/3 cup dry white wine

/3 cup water

1 teaspoon Vegetable broth

2 teaspoons Basil

1 teaspoon oregano

1/2 cup of feta cheese (crumbled)

salt and pepper to taste

Put the tomatoes in a bowl and pour very hot water, almost boiling, into the bowl.

Cook the pasta according to directins.

Place the broccoli flowerets in the colander, then drain the pasta using that same colander.  The hot pasta and the hot water will slightly cook the broccoli.

Heat oil in a nonstick skillet. Add garlic and cook for 30 seconds.  Add wine, water, spices, and broth to skillet.

Cook for about one minute. Remove from heat and ad broccoli and pasta.
Drain the tomatoes and add to pasta mixture.  Mix well, and then add feta cheese, salt and pepper.

Mix well again, serve hot and enjoy!
